Well, I was going to come in here and reccomend the Red Iguana but I was beaten to the punch. I love the Mole's there.
I love Ginza, Ichiban and the Happy Sumo for sushi and Japanese.

I also like the Porcupine Grill at the mouth of Little Cottonwood and the Bohemian has good Czech food.
When I lived there, my absolute favorite place to eat was Rodizio Grill at Trolley Square. It's a Brazilian Steakhouse (basically a gourmet meat buffet) and- to this day- I have never had a drink better than their mango juice. My wife still salivates when grilled pineapple is mentioned.
We also liked Tucci's for Italian across the street. Before we lefted, we also enjoyed Buca di Beppo (it's a chain, but still not too bad...)
Our favorite Mexican was a little joint called Cancun Cafe on 39rd South and about 7th East

I like Iggy's for a good burger or a big tasty calzone. They also have a lot of good drinks and if you like sports you'll like the atmosphere.
For pretty authentic Mexican food check out the Red Iguana on North Temple, good grub, the place is usually pretty packed during peak hours though.
Also, if you like pizza then try the The Pie Pizzaria, just be aware going in that you'll leave covered in grease.
The Silver Creek Lodge up Big Cottonwood canyon is great for breakfast, you may not be able to get there until April or May though, that is unless you have a snow tires and 4-wheel drive.
For good Asian cuisine try The Mandarin in Bountiful. It's always busy so expect a wait.
ZTejas has some tasty southwestern style food, it's at The Gateway mall near downtown Salt Lake City.
There is a ton of great places at the Gateway.
